Cinnamon-Apple Cake

I have made this before. Made it again tonight. It's a Fall favorite. Moist, light and delicious.

Cinnamon-Apple Cake
adapted from Cooking Light

Ingredients:
  • 1 3/4 cups Sugar, divided
  • 1 stick (8 Tablespoons) Unsalted Butter, softened
  • 1 teaspoon Vanilla
  • 6 ounces Cream Cheese, softened
  • 2 large Eggs
  • 1 1/2 cups All-purpose Flour
  • 1 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 2 teaspoons Cinnamon
  • 3 cups chopped Apples (about 2 large - and any variety except Red Delicious, despite their name, they are anything but delicious!)
Directions:
  1. Preheat oven to 350°F. Spray 9-inch springform pan with cooking spray and set aside.
  2. Beat 1 1/2 cups sugar, butter, vanilla, and cream cheese at medium speed in a mixer until well-blended (about 4 minutes). Add eggs one at a time, beating well after each addition
  3. Combine flour, baking powder, and salt. Add flour to creamed mixture, beating at a low speed until just blended.
  4. Combine 1/4 cup sugar and cinnamon. Combine two tablespoons of cinnamon-sugar mixture and apples in a bowl. Stir apple mixture into batter. Pour batter into prepared pan and sprinkle with remaining cinnamon-sugar mixture.
  5. Bake for 65-70 minutes or until the cake pulls away from the sides of the pan. Cool the cake completely on a wire rack. Cut using a serrated knife.
